<p dir="RTL" style="text-align:justify;line-height:normal;"><strong><span style="font-family:yagut;"><span style="font-size:12.0pt;">چکیده</span></span></strong></p>
<p dir="RTL" style="text-align:justify;line-height:normal;"><strong><span style="font-family:yagut;">زمینه و هدف: </span></strong><span style="font-family:yagut;">مصرف مقادیر زیاد هیستامین همراه با غذا باعث ایجاد مسمومیت</span><span style="font-family:yagut;"> هیستامینی در مصرف­کنندگان می­گردد. </span><span style="font-family:yagut;">اطلاعات چندانی در مورد محتوای هیستامین در مواد غذایی مختلف در کشور در دسترس نیست. </span><span style="font-family:yagut;">در مطالعه حاضر، میزان هیستامین در نمونه­هایی از مواد غذایی مورد مصرف در رژیم غذایی انسان که بر اساس اطلاعات موجود در منابع می­توانند حاوی هیستامین باشند، اندازه­گیری گردید.</span></p>

<p dir="RTL" style="text-align:justify;line-height:normal;"><strong><span style="font-family:yagut;">روش بررسی: </span></strong><span style="font-family:yagut;">این مطالعه بر روی تعداد 240 نمونه از 16 نوع مختلف مواد غذایی مورد مصرف در رژیم غذایی انسان </span><span style="font-family:yagut;">انجام پذیرفت.</span> <span style="font-family:yagut;">هیستامین در نمونه­های ماهی تازه و کنسرو ماهی به­وسیله حلال اتانول 75 درصدـ اسیدکلریدریک 4/0 نرمال و در سایر نمونه­ها به­وسیله اسید کلریدریک 1/0 نرمال استخراج گردید. پس از عبور عصاره­ها از ستون کروماتوگرافی تعویض یون، مشتق فلورسنس هیستامین به­ وسیله محلول اٌ- فتال­دی­آلدئید ایجاد و میزان نور فلورسنس ساطع شده در طول موج تحریکی 350 نانومتر و طول موج ساطعی 444 نانومتر اندازه­گیری گردید. دادهها با استفاده از روش{های آماری توصیفی تجزیه و تحلیل شدند. </span></p>

<p dir="RTL" style="text-align:justify;line-height:normal;"><strong><span style="font-family:yagut;">یافتهها: </span></strong><span style="font-family:yagut;">اسفناج، ماهی تازه، کنسرو ماهی و بادمجان بیشترین میزان هیستامین را با میانگین 04/5، 83/3، 77/2 و 64/2 میلی­گرم در صد گرم نشان دادند. تمامی نمونه­های آزمایش شده اسفناج، ماهی تازه، کنسرو ماهی و بادمجان حاوی هیستامین بودند و به ترتیب 3/53، 0/20، 3/13 و 3/13 درصد از نمونه­های مورد آزمایش از این مواد غذایی حاوی مقادیر بالاتر از 5 میلی­گرم در صد گرم هیستامین بودند. مقادیر کم هیستامین در تعدادی از نمونه­های گوجه­فرنگی، خیارشور، گردو، موز، پرتقال، خربزه، پنیر، کشک، ماست و دوغ مشاهده گردید و در زیتون و چای میزان هیستامین کمتر از حد قابل تشخیص مشاهده گردید. </span></p>

<p dir="RTL" style="text-align:justify;line-height:normal;"><strong><span style="font-family:yagut;">نتیجهگیری: </span></strong><span style="font-family:yagut;">علاوه بر تأیید این مسأله که ماهی و فراورده­های غذایی دریایی از ریسک بالایی از نظر ایجاد مسمومیت هیستامینی برخوردارند، همچنین نشان داد که احتمال ایجاد مسمومیت هیستامینی در انسان، در نتیجه مصرف اسفناج و بادمجان کمتر از ماهی و فراورده</span><span dir="LTR"></span><span style="font-family:yagut;">های آن نخواهد بود. بنابراین آگاهی از میزان هیستامین مواد غذایی موجود در رژیم غذایی انسان از این نظر نیز حایز اهمیت است که می</span><span dir="LTR"></span><span style="font-family:yagut;">تواند به عنوان هشداری در جهت منع مصرف هم</span><span dir="LTR"></span><span style="font-family:yagut;">زمان آن</span><span dir="LTR"></span><span style="font-family:yagut;">ها به وسیله مصرف</span><span dir="LTR"></span><span style="font-family:yagut;">کنندگان به</span><span dir="LTR"></span><span style="font-family:yagut;">خصوص در افراد حساس به مسمومیت هیستامینی باشد.</span></p>

<p><strong>ABSTRACT</strong></p>

<p><strong>Background & </strong><strong>aim:</strong> Consuming high amounts of histamine with food causes histamine poisoning among its consumers. Much information about the content of histamine in various food products is not available in the country. In the present study, the amount of histamine in food samples consumed in human diet which are based on existing data sources can contain histamine were measured.</p>
<p></p>
<p><strong>Methods: </strong>In the present study, 240 samples of 16 different types of food consumed in the human diet were examined. Histamine was extracted with 75 % ethanol- 0.4 N HCl in fresh and canned fish samples and extracted in other samples with 0.1 N HCl. After passing the extracts through ion exchange chromatography, the fluorescence derivative of histamine which was generated by O-phthaldialdehyde and the amount of fluorescent light was measured at excitation wavelength of 350 nm and emission wavelength of 444 nm respectively. Data were analyzed using descriptive statistics.</p>

<p><strong>Results: </strong>Spinach, fresh fish, canned fish and aubergine samples showed the high level of histamine with the mean levels of 5.04, 3.83, 2.77 and 2.64 mg/100g respectively.</p>
<p>All samples tested contains histamine but 53.3, 20.0, 13.3 and 13.3 percent of the samples of these foods contains higher amounts histamine (5mg/100gr) respectively.Low levels of histamine was observed in a number of samples including tomato, pickles, nuts, bananas, oranges, melons, cheese, curd, yogurt and dough but no detectable histamine was found olive and tea.</p>
<p></p>
<p><strong>Conclusion:</strong> In addition to confirming the fact that fish and seafood products have a high risk of histamine poisoning, but it showed that the risk of histamine poisoning in humans after consumption of fish and its products will not be less than spinach and aubergine.</p>
