Introduction: Due to the resistance of microorganisms to antibacterial agents, efforts are being made by researchers to replace the plant natural substances with antimicrobial properties and the  side effects of these substances lower than those of chemicals. The aim of this study was hydroalcoholic extract of malva sylvestris as a Food Preservative with some microorganisms, which further cause contamination of food products
Materials and Methods: Several experiments were carried out on anti-microorganism properties of malva sylvestrisi. Hydroalcoholic extract of malva sylvestrisi and media culture such as: tomato juice, grape juice, pineapple juice and flour agar were prepeared, then we subculture Staphylococcus aureus, Escherichia coli, Candida albicans and Aspergillus nigra to refreshed these microorganisms. The minimum inhibitory concentration and the minimum inhibitory concentration of this extract on these microorganisms were measured and then the zone inhibition diameter of this extract on theses microorganisms were compared with standard antibiotics
Results: The results of this study showed that in the concentration of 16 mg / ml, 8 mg / ml, 4 mg / ml, 2 mg / ml and 1 mg / ml, of malva sylvestrisi hydroalcoholic extract, zone of inhibition diameter for staphylococcus aureus were 20, 18, 15, 10 and 6 mm respectively And for E. coli there was no growth inhibition. For Aspergillus niger and Candida albicans in which concentrations of 31.25 mg / ml were shown.
Discussion and Conclusion: The results showed that the extract in combination with chemical agents has a high conservation effect, however, we hope that in the future, with more work on this plant, it can be used as a substitute for the chemical agents
